The Department of Fishery Products Technology, Faculty of Fisheries and Marine Sciences, Diponegoro University held a Field Trip at Marine Science Techno Park, Diponegoro University, Teluk Awur, Jepara Regency, on Monday, October 10, 2022. This visit involved 30 active students from the Fishery Products Technology undergraduate study program. The theme of this field trip is “Handling and Diversification of Vannamei Shrimp-Based Products”. The Fieldtrip aimed to increase students’ insight and knowledge about handling and sorting shrimp after harvest and understanding the potential for food diversification to increase the selling value of vannamei shrimp. Vannamei shrimp are taken directly from aquaculture ponds in the Marine Science Techno Park, Diponegoro University, Teluk Awur, Jepara Regency, so that the quality of the shrimp used in the handling and diversification activities is still in very fresh condition.
Sorting is done by distinguishing shrimp based on the quality of moulting from vannamei shrimp. Shrimp that have not undergone moulting will be separated for the export process. Shrimp that have undergone the moulting process (tend to be mushy) will be used as the main ingredient for diversification activities. The shrimp obtained were then peeled, cleaned of dirt and cut off the head (Peeled, Deveined, Head-off). The next process is the practice of food diversification, namely the manufacture of Ebi furai, one type of Breaded Food product. Shrimp that have been cleaned are coated with flour, dipped in the Batter solution, and then covered with breadcrumbs. The finished product will be fried in hot oil (Deep Fry) for 10-15 minutes, and then the product is ready to be served.
